Mexican-Peruvian Fusion Fiesta: 5-Course Tasting Menu

Mexican-Peruvian food fusion is a creative and flavorful merging of two vibrant culinary traditions and techniques from rich and diverse cultures. While corn plays a prominent role in Mexican and Peruvian cuisines, other ingredients such as chilis, seafood, and potatoes are used in interesting, unique, and different ways.  

Having traveled to Peru, developing this menu has been fun and exciting. I’ve created dishes that highlight some of the best flavors of Mexico and Peru. Tickets can be purchased here.

 

First Course  - Causa Lima

A Peruvian classic symbolizing the country’s pride and independence, this dish features chilled, citrus-infused guajillo chili mashed potatoes. Layered with avocados and tender shredded chicken, dressed in cilantro and jalapeños, this vibrant dish is accompanied by fresh tomatoes and finished with a rich black olive coulis.

 

Second Course - Peruvian-Mexican Ceviche

Fresh sea bass is marinated in zesty lime juice and chiltepin chili, a bold chili native to Sonora, Mexico. This refreshing ceviche is complemented by pozole corn and avocado, a zesty salsa criolla, and a savory touch of Sonoran beef (machaca). It is served alongside house-made sweet potato chips for the perfect balance of textures and flavors.

 

Third Course - Skewered Lomo Saltado

This flavorful fusion of Peruvian anticucho and lomo saltado blends influences from Peru, China, and Mexico. Tender filet kebabs are marinated in a vibrant soy-chimichurri sauce, skewered, and grilled to perfection. Served with sautéed tomatoes, onions, and crispy French fries tossed in savory seasonings.

 

Fourth Course - Seco de Asada de Tira de Roman

This is a reimagined Peruvian classic: tender, slow-braised boneless beef ribs infused with aromatic herbs, served atop a silky black bean purée. Coriander salsa paired with glazed baby carrots and crisp pea pods adds color and texture.

 

Fifth Course - Buñuelos with Peruvian Carmel

This festive and irresistible treat is inspired by the flavors of Spain, Mexico, and South America. This light, crispy dessert is drizzled with rich Peruvian caramel and served alongside velvety yellow corn ice cream, offering a delightful balance of sweetness and texture.
